Spiced Venison Haunch Steaks

Ingredients

  • 4 Venison Haunch Steaks
  • Olive Oil
  • Salt and Black Pepper
  • For the Marinade

  • 240ml/8fl.oz. Robust Red Wine
  • 1 x 7.5cm/3-inch Cinnamon Stick, crumbled
  • 1 Bay Leaf, crumbled
  • 6 Juniper Berries, crushed
  • 4 Cloves, crushed
  • A strip of Orange Rind
  • 1/2 Onion, sliced

    Instructions

    1. Place all the marinade ingredients in a large bowl and mix well.
    2. Add the Steaks, turn to coat, cover and refrigerate for 4 hours, turning from time to time.
    3. Remove the Steaks from the bowl, reserving the marinade, and cook over medium hot coals for 10 minutes on each side, basting with the reserved marinade from time to time. Serve hot.
