This is a magnificent roast of supreme prime Wild Venison. The cut is referred to by butchers as the “eye only loin” and is taken from the saddle of the deer. It has a beautiful rich flavour and when roasted, provides a tender, mouth-watering meal. Try layering with streaky bacon to add to the flavour and to lock in those delicious juices.
