Diced Pork Casserole with Sesame

Ingredients

  • 1 kg diced Pork
  • 1 cup (250 ml ) water
  • Plain flour 1/2 cup
  • (125 ml ) dry sherry
  • 2 tblsns vegetable oil
  • 1 medium (200g ) red pepper, chopped
  • 1 medium (150g ) onion
  • 1 medium (200g ) green pepper, chopped
  • 2 cloves garlic, crushed
  • 2 tblspns sesame seeds
  • 2 tblspns corn flour
  • 1/4 cup (60 ml ) soy sauce
  • 1/4 cup (60 mls ) water, extra
  • 1/4 cup (60 ml ) honey
  • 1/4 cup (60 ml ) plum jam
  • 1 chicken stock cube, crumbled

Instructions

1. Toss pork in flour, shake away excess flour. Heat oil in a large pan, stir in pork, cook about 5 mins or until pork is browned all over. Remove pork from pan, drain excess oil from pan.
2. Cut onion into wedges, stir in onion, garlic and seeds into pan, cook 3 mins or until seeds are browned lightly. Stir sauce, honey, jam, stock cube, water and sherry into pan, bring to boil; simmer, uncovered, 5 mins.
3. Combine pork, capsicums and sesame sauce in 1.5 litre casserole dish. Bake, covered, in moderate oven about 1 1/2 hors, or until the pork is tender. Stir in apple and cornflour blended with extra water. Bake, covered, 15mins, or until casserole is thickened.
