Having been a butcher for 30 years, I would like to consider myself to be somewhat of an expert when it comes to meat. Whoever does your butchering really knows what they are doing. We don't buy meat from supermarkets for a very good reason and you have just confirmed my point. Your fillet steaks were probably the best we have had and it shows the difference it makes when it is hung and butchered properly. Well done and thanks again.
