| Pork Belly with Crackling (Serves 2-3)
This is by far one of our favourites at Glenlyon Gourmet. It would be difficult to find a piece of pork with more flavour and delicious juices. It owes all this to the beautiful fat that runs through the meat. It also makes the BEST crackling you have ever tasted. The best way to cook this cut is to start hight for the crackling and turn right down and cook slowly. |
